Instructions

  1. Prepare Ingredients

Gather and measure all ingredients; slice kielbasa, onion, and peppers, dice tomatoes, mince garlic, and set out the main tools. · 15 min

What to look for: Ingredients are measured and arranged in separate, ready-to-cook piles.

  2. Brown Kielbasa

Heat sunflower oil in a large pot, fry sliced kielbasa for 5-6 minutes until lightly browned, then lift it to a bowl. · 6 min

When it is done: Kielbasa should be hot through; if using raw pork kielbasa, reach 63°C / 145°F internally.

  3. Soften Aromatics

Sauté onion and garlic in the same pot for 4 minutes, scraping browned sausage bits, until soft, sweet, and translucent at the edges. · 4 min

What to look for: Onion looks glossy and flexible, and garlic smells fragrant without browning.

  4. Cook Peppers

Add all peppers to the pot and cook for 10 minutes, stirring often, until their edges slump and the pepper juices begin to collect. · 10 min

What to look for: Peppers are brighter, softened at the edges, and starting to release liquid.

  5. Add Paprika

Stir in tomatoes, sweet paprika, smoked paprika, and hot paprika until the spices tint the vegetables and smell warm, about 3 minutes. · 3 min

What to look for: Tomato juices loosen the pot and the sauce turns a warm brick-red color.

  6. Simmer Stew

Return kielbasa to the pot and simmer uncovered for 20 minutes, stirring now and then, until the vegetables are soft and the sauce reduces. · 20 min

When it is done: Kielbasa remains hot through the center before serving.

  7. Season Serve

Season with salt and black pepper, fold in fresh oregano, rest for 2 minutes, and serve hot in deep bowls as a main dish. · 2 min

What to look for: Leczo looks glossy, red-orange, and spoonable, with fresh oregano flecks on top.
